These delicious fat bombs give you the crunch from the nuts and the melt in the mouth feel from the cream cheese and butter all at the same time.

These are the types of bites that you want to make really small and keep handy when you need a fat boost.

I don’t make them part of my every day ketogenic experience, so every bite feels like a special occasion.

What I like about this specific recipe, is that it makes only six crunchy and creamy fat bombs.

When you cook for one or even two it is great to have recipes that really cater for one person.

This is especially important if you are worried that you’ll overindulge if you have too many super delicious snacks on hand.

These are all simple ingredients and if you do any keto baking you probably have them all on hand.

Now, let’s make them…

Cream the butter, cream cheese, and sweetener together. Add the flour, vanilla essence and half the nuts and mix until the mixture is ready to be scooped into small balls.

Roll the balls in the rest of the nuts, place them on the parchment paper and freeze for 20 to 30 minutes.

I love how they melt in my mouth but are crunchy at the same time. And of course, how truly ease they are to make.

Walnut and Cream Cheese Fat Bombs

To get the melt in the mouth experience you’ll probably need to stick to the cream cheese and butter, but you can also try coconut butter.

If you do – use half as you don’t want the coconut flavor and mouth feel to overwhelm your treat.

For the crunch, you can use different nuts. As long as you can crush the nuts, they’ll work.

Just remember that the carb count may be different. 

On that – it is always a good idea to calculate your own macros.

I usually make these with almond flour, but you can really use any nut flour.

The main reason I use almond flour is because I buy it in bulk and usually have it on hand.


Occasionally I find other interesting flours like pecan flour.

My experience with pecan flour is that it is seldom as fine as almond flour.

So, because it is coarser and already provides the crunch, I will not add any crushed nuts into the batter.

However, I will still roll the balls in crushed nuts.

What can you do to lower the amount of carbs?

Not much really!

But if you change the nuts the carbs count may come down slightly. (Or increase depending on the type of nut.)

I like walnuts for many reasons – taste, price, and availability.

But they are higher in carbs than say Pecan, Macadamia, and Brazil nuts.

Pecan nuts will work well in this recipe, but Macadamia or Brazil nuts won’t give you the crushed crunch that Pecans and Walnuts do.

Wondering how long you can store these low carb high fat bites?

As long as you store them in an airtight container they’ll last for up to a week in your refrigerator.

Or longer in the freezer, but personally I prefer to make small batches and store them in the refrigerator.

You’ll also want to eat them cold if you don’t want them melting in your hands.
