Keto Low Carb Chicken Zoodle Soup

    (1 large onion)

    minced
  • ½
    cup
    carrots
    diced
  • 8
    cups
    Kettle & Fire Chicken Bone Broth
    (4 cartons)
  • 2
    tbsp
    fresh parsley
    and/or dill
  • 8
    oz
    zucchini noodles
    (1 large zucchini)
  • 1
    tsp
    salt
  • ½
    tsp
    black pepper
  • 2
    cups
    rotisserie chicken
  • 1
    tbsp
    lemon juice
  1. Spiralize zucchini using the medium blade. Set aside.

  2. Heat oil in a large pot over medium heat. Cook onion until tender. Add carrot and celery till softened. If chicken is raw, add for about 5 minutes till browned.

  3. Add half of the broth, fresh herbs, and bring to boil.

  4. Once boiling, lower heat and let simmer uncovered about 15-20 minutes or until vegetables are tender.

  5. Stir in zucchini noodles and let cook 1-2 minutes or just until slightly softened. For firmer noodles, place raw noodles in bowls and ladle hot soup over zucchini noodles.  Allow to sit 2 minutes to soften.

  6. Add remaining broth as needed for desired ratios. Salt and pepper to taste.

  7. Plate in bowls, squeeze lemon juice, and add sliced avocado to garnish with more fresh herbs.
