Whenever I have a cookout and need some bread to hold my burgers and hot dogs, I’ll make some keto rolls, keto hamburger buns, and these keto hot dog buns.
Gone are the days of bunless burgers and bunless hot dogs.
I’ve never been someone who could put a hot dog on a lettuce leaf and call it a day. I’m sorry, but lettuce wraps are NOT a substitute for hot dog bun. As someone who loves a grilled hot dog, having the appropriate vehicle to hold it was mandatory. Luckily, I’ve never had to use a lettuce leaf to hold my hot dogs, thanks to some easy and delicious homemade hot dog buns.
This keto hot dog buns recipe is quite the game-changer. It looks, tastes, and feels like an actual hot dog bun, minus the carbs. It needs just 6 ingredients to make and no yeast, which is commonly found in most bread products.
The texture of these buns is soft and fluffy in the middle with a tender and golden exterior. Although they are made with shredded cheese and almond flour, you won’t be able to taste either of them at all, as they are very mild-flavored (like any good bread!).
I recently had some friends over for a cookout and my two friends who follow a keto diet enjoyed their hot dogs and grilled hot dogs in their homemade buns and they could NOT believe they were low carb- Even my other guests were pleasantly surprised!
How do you make keto hot dog buns?
- Almond flour– Blanched or superfine almond flour, not almond meal. This gives the buns the light and golden crust, without being dense.
- Coconut flour– Works with the almond flour to give the middle part more elasticity and a doughy texture.
- Baking powder– Leavening agent used to give the buns some stability.
- Mozzarella cheese– Low moisture mozzarella cheese. This gives the buns extra fluffiness and a more golden crust.
- Cream cheese– Full fat and softened to room temperature.
- Eggs– Room temperature eggs. The third egg will be used as an egg wash to brush on top of each of the buns.
Start by whisking together the dry ingredients in a small bowl then set that aside. In a microwave safe bowl, combine the mozzarella cheese and cream cheese. Microwave them together in 20-second spurts until they are mostly melted, before whisking them together until smooth. Let the cheese cool for several minutes.
Next, add the still-warm cheese, eggs, and dry ingredients into a food processor and pulse until combined and broken down. Transfer the dough onto some plastic wrap and cover it tightly, before kneading it several times. Once the dough is smooth, divide it into 4 large or 8 small equal portions. Roll the dough into hot dog bun shapes and place them on a lined baking sheet.
Finally, whisk the final egg and brush the exterior of each of the buns. Bake the hot dog buns for 23-25 minutes, or until golden brown. Remove them from the oven and slice in half, before adding a keto friendly hot dog to each one. Drizzle with some keto honey mustard and keto ketchup and enjoy immediately.
Tips to make the best recipe
- You must use a food processor or blender to mix the dough together. Using a wooden spoon and mixing bowl will not be powerful enough to incorporate all the ingredients properly, which can affect how well they rise.
- Heat the cheese in 20-second spurts otherwise you risk the mozzarella cheese overcooking and becoming rubbery.
- Using low moisture mozzarella cheese ensures the dough doesn’t become overly wet and sticky.
- Slice the hot dog buns in half as soon as they are removed from the oven.
Storing, freezing, and reheating low carb hot dog buns
You’ll notice the hot dog buns become quite firm once they are cool or at room temperature. While leftovers can be refrigerated and frozen to enjoy later, they will need to be warmed up before adding your hot dogs and fillings.
- To store: Leftovers can be stored in the refrigerator for up to 5 days.
- To freeze: Place buns in a ziplock bag and store them in the freezer for up to 2 months.
- Reheating: Microwave the buns in 20-second spurts until warm.

Whisk the third egg and brush the exterior of all the buns completely. Bake the buns for 22-25 minutes, or until golden on the outside.
Remove the hot dog buns from the oven and slice them down the middle. Add your keto hot dogs to them and serve immediately.
TO FREEZE: Place buns in a ziplock bag and store them in the freezer for up to 2 months.
TO REHEAT: Microwave the buns in 20-second spurts until warm.
